Bitter Orange Morning Marmalade

Ingredients

  • bitter oranges800 g
  • lemon, juiced1
  • water1 L
  • granulated sugar800 g

Kitchen note

Test set on a cold plate—if it wrinkles when nudged, you’re ready.

Method

  1. 01

    Prepare the fruit

    Quarter oranges, scoop pulp and seeds into a muslin bag, and slice peel into thin ribbons.

  2. 02

    First boil

    Simmer peel, pulp bag, lemon juice, and water until the peel is tender, about 1 hour.

  3. 03

    Set with sugar

    Remove the bag, add sugar, boil hard to setting point, then jar while hot.
